Fish Tacos
This was a crowd pleaser tonight! For those of you that are on the 5&1 plan... this is right up your alley!
What you need...
12 oz tilapia (you can use any fish, shrimp, chicken, or even tofu! I also used 16 oz to have enough protein for Gray since he's on the 5&1 plan)
1/4 tsp. ground cumin
1/4 tsp smoked paprika
1/8 tsp salt
2 tsp canola oil
4 organic corn tortillas (I used green leaf lettuce leaves instead)
1/2 cup cooked black beans or fat-free refried beans, warmed (Omit this if you are on the 5&1 plan - If not, choose low sodium or not salt added beans)
1 ripe avocado, diced
Add any other vegetables that you like! I used tomatoes and red peppers. Gray added mushrooms to his. Just make sure you have 3 servings of any veggie combination.
I also added a couple of condiments, salsa and light sour cream - 1 T each
What you do...
1. Sprinkle the tilapia evenly with the cumin, paprika, and salt.
2. In a medium skillet, heat the oil over medium heat. Add the tilapia and cook for 2 minutes per side, or until opaque in the center.
3. If you are using the tortillas, warm them up, and place 2 on a plate. If you're using lettuce leaves like I did, just pull off the entire leaf and lay them in your plate. I like to overlap the ends so it all holds up better.
4. Flake the tilapia with a fork and divide it evenly between the tortillas.
5. Top each taco with your toppings!
