Shrimp Lo Mein - made with spaghetti squash
Feeling like a little Chinese food might do the trick to tame your palate tonight? Well, then try this! This is a healthier option without all of the extra carbs. You get your protein and 3 servings of vegetables.
I love following sandyskitchenadventures.com to find healthy recipes that are on plan. This one is so good that even Wyatt loved it! He didn't want the spaghetti squash so I gave him extra servings of broccoli.
It was gone in 5 minutes... nom nom nom...
This recipe makes 1 serving which includes 1 leanest, 3 greens, 3 condiments, and 2 healthy fats (for those of you who are on plan).

Shrimp Lo Mein
Ingredients:
1 cup of spaghetti squash, cooked
½ cup broccoli
1 tbsp lite soy sauce (I love Tamari soy sauce – it doesn’t have as much sodium in it)
1 tsp teriyaki sauce
¼ tsp garlic powder
¼ tsp ground ginger
9oz raw shrimp, deveined with tails off
1 tsp olive oil
1 tsp sesame oil
Directions:
Heat oils over medium-high heat. Add shrimp and cook for 3-4 minutes or until shrimp is cooked. Add spaghetti squash, broccoli, sauces, and spices. Tos until coated and warmed through.
