Veggie Flatbread Pizza with a Side Salad

 Pizza Time!

I love pizza so much that I think that it is probably my favorite food. I love eating pizza in different ways. Recently I've been using cauliflower crusts. If you make your own, they are so much better. Although, Cali'flour makes some great crusts too.

Today, I threw together a simple and easy lunch That was perfect for fueling my body. Lunch doesn't have to be complicated! 

Here is what I did...

You will need for the pizza...

1 whole grain wrap or tortilla (I like using the Flat Out brand)
1/4 cup Rao's Tomato Basil pasta sauce
1 serving of any veggie that you like or a combination to equal a serving (I used 1 serving of mushrooms)
1.5 ounces of shredded cheese
Sprinkle of basil

You will need for the salad...

1/2 cup of greens (I love using a spring mix)
Any combination of veggies that you like (I like to use broccoli, cauliflower, grape tomatoes, cucumber, and carrots)
1 tablespoon of salad dressing (I used Ken's Northern Italian dressing today)
1 ounce of avocado. 

What you need to do...

Preheat your oven to 350. Make you pizza. Bake for 8-12 minutes. Throw all of your salad ingredients together

Wallah!! Lunch!


You get a serving of grains. Some protein from the cheese. About 3 servings of vegetables. Along with a healthy fat. Perfect!
